Slice the grapefruit and lemon into two equal parts.
Slice one ¼" slice from each part of the lemon and set pieces aside.
Using a hand juicer, juice both the grapefruit halves and the lemon's remaining halves.
Place sprigs of thyme in a shaker and muddle using a cocktail muddler.
Add the grapefruit and lemon juice to the shaker.
Add the honey ginger syrup, gin, and 2-3 ice cubes to the shaker.
Shake!
Fill your glasses approximately half full with ice.
Using a cocktail strainer over the shaker opening, pour the mixture into the glass until approx ¾ full.
Top off the glass with sparkling water, and stir.
Garnish with a lemon slice.
