Place the ginger pieces in the cocktail shaker and the two thyme sprigs.
Using a cocktail muddler, muddle the ginger and thyme together.
Add to the shaker the lemon juice, bitter, and honey-infused bourbon.
Place the top on the shaker and Shake!
Fill two lowball glasses approximately ⅔ full with ice.
Using a cocktail strainer, strain the mixture equally into each glass - approximately ⅔ full.
Fill the remainder of each glass with ginger ale.
Add a sprig of thyme to each glass as a garnish.
