In a cast iron skillet heat olive oil over medium heat
Coat Cod fish with garlic powder, onion powder, paprika, and salt and pepper
Place the seasoned cod in the cast iron skillet over medium heat
Sear the fish for 3-4 minutes on each side
Add butter, minced garlic and lemon zest
Sear for one minute
Garnish with green onions and serve
Notes
You can use this recipe with any fish you choose. When we cook with Salmon or one of the more hearty fishes we add 1 tsp of lemon juice.We like to serve this with a side of asparagus. When the fish is finishing you can toss the asparagus in the pan for quick one pot meal.We also serve this with our Asian Veggie dish for a healthy, quick, weeknight meal.
