Peel the hard-boiled eggs and cut them into two even halves.
Remove the yolks and place them into a small mixing bowl.
Crumble the egg yolks with a fork.
Add the mayonnaise, mustard, paprika, pepper and salt.
Mix until thoroughly combined.
Filling the Eggs
Fill a decorating injector or piping bag with the egg yolk mixture.
Fill the yolk cavity of each egg half with the mixture.
Sprinkle paprika lightly on top as a garnish.
Chill until ready to serve.
