Heat olive oil in a 6-quart stock pan over medium heat.
Add celery, onion, and carrot (Mirepoix).
Saute until the onions become translucent.
Add garlic and saute for one minute.
Add chicken base, water, salt, pepper, and thyme.
Bring to a boil.
Add shredded or cubed chicken.
Add spinach and milk.
Gently add in the gnocchi and boil for 3-4 minutes.
Add additional salt and pepper to suit your tastes.
