Instructions
Heat oil in a large nonstick skillet.
Add chicken, salt, and pepper, and Italian seasoning, stirring occasionally, until the chicken is cooked thoroughly, approximately 8 to 10 minutes.
Mix in garlic and cook for about 1 minute or until you get the fragrant aroma of warm garlic.
Stir in wine, lemon juice, and zest. Bring to a simmer and cook for about 3 minutes.
Add in the spinach. Stir until the spinach is completely immersed in the wine sauce.
Remove from heat and add the parmesan cheese.
Serve immediately.

Culinarian tips, tricks, and suggestions: You can use any oil you prefer. Our favorite oil is Safflower oil; however, when we made this recipe, we used the remaining oil from making breakfast sausage for our Gluten-Free Spicy Breakfast cups in place of the olive oil. You can enjoy this easy weeknight dish over your favorite pasta or potatoes. Our favorite is mashed potatoes. For a different twist, you can use marsala wine vs white wine. This makes for a cheesy spin on chicken marsala. Love Bacon? Saute a few slices of chopped bacon. Keep the bacon and grease in the pan and add the ingredients according to the recipe.
