Chicken and Spinach One-Pot
Chicken, Spinach and Parmesan in one dish. Gluten-Free

Ingredients
- 2 tbsp Olive Oil
- 1 lb Chicken Breast - boneless and skinless, cut into bite-size pieces
- 1 tbsp Italian Seasoning
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1 tbsp Garlic - minced
- 1/2 cup White Wine - dry
- 1 Lemon Juice and Zest
- 8 cups Fresh Spinach
- 7 oz Parmesan Cheese
Instructions
- Heat oil in a large nonstick skillet.
- Add chicken, salt, and pepper, and Italian seasoning, stirring occasionally, until the chicken is cooked thoroughly, approximately 8 to 10 minutes.
- Mix in garlic and cook for about 1 minute or until you get the fragrant aroma of warm garlic.
- Stir in wine, lemon juice, and zest. Bring to a simmer and cook for about 3 minutes.
- Add in the spinach. Stir until the spinach is completely immersed in the wine sauce.
- Remove from heat and add the parmesan cheese.
- Serve immediately.
Notes
Culinarian tips, tricks, and suggestions: You can use any oil you prefer. Our favorite oil is Safflower oil; however, when we made this recipe, we used the remaining oil from making breakfast sausage for our Gluten-Free Spicy Breakfast cups in place of the olive oil.
You can enjoy this easy weeknight dish over your favorite pasta or potatoes. Our favorite is mashed potatoes.
For a different twist, you can use marsala wine vs white wine. This makes for a cheesy spin on chicken marsala.
Love Bacon? Saute a few slices of chopped bacon. Keep the bacon and grease in the pan and add the ingredients according to the recipe.
