Zingy Creamy Potato Salad

A creamy potato salad with a surprisingly zingy flavor.

Ingredients

  • 1 lb Red Potatoes
  • ¼ tsp Salt
  • 6 cups Water
  • 2 Egg
  • 1 tbsp Dry Mustard
  • tsp Cayenne Pepper
  • ½ cup Mayonnaise
  • ½ cup Sour Cream
  • ½ lb Bacon
  • 1 bunch Fresh Chives
  • Salt and Pepper - to taste

Instructions

Preparing Potatoes & Eggs

  • Rinse the red potatoes and then cut them into 1" chunks. Place in a stock pot with the two eggs. (The eggs should be whole)
  • Fill the pot with enough water to cover the potatoes and eggs. Add the salt. Bring to a boil.
  • Boil the potatoes until they are soft - Not falling apart! Don't remove the eggs.
  • When the potatoes are ready, remove the pot from the heat.
  • Drain the potatoes and eggs. Rinse both under cold water in a colander to stop them from cooking.
  • Once the eggs are cool, peel and shred them into a separate bowl.
  • Set aside.

Prepare the Bacon

  • Cut the bacon into small pieces ½ - ¾ inch long.
  • In a skillet over medium heat, cook bacon until crispy.
  • Remove the bacon and allow it to drain and cool.

Combing We Ingredients and Spices

  • Mix the mayonnaise, sour cream, cayenne pepper, dry mustard & chives.
  • Set aside.

Bringing it Altogether

  • Add the drained, crispy bacon to the wet ingredient mixture.
  • Add the shredded hard-boiled eggs.
  • Add the drained and cooled potatoes.
  • Fold all of the ingredients together.
  • Add salt and pepper to taste.
  • Place in a serving dish and chill until you are ready to serve.
  • Garnish with a few pieces of fresh chive, and Enjoy!

Notes

Culinarian Tips, Tricks, and Suggestions:
if you prepare this terrific potato salad a day earlier and chill it overnight, the flavors become more pronounced and "zingy".
