Creamy Chicken Gnocchi Soup
A light and creamy soup with the flavors of fresh spinach.

Ingredients
- 8 cups Chicken - cubed or shredded
- 1 cup Celery - diced
- 1 cup Carrot - diced
- 1 cup Sweet Onion - diced
- 2 cloves Garlic - peeled and minced
- 1 tbsp Olive Oil
- 9 cups Water
- 3 tbsp Chicken Base - concentrated chicken stock
- 3 sprigs Fresh Thyme
- 16 oz Potato Gnocchi
- 1 cup Milk
- 2 cups Fresh Spinach
- Salt and Pepper - to taste
Instructions
- Heat olive oil in a 6-quart stock pan over medium heat.
- Add celery, onion, and carrot (Mirepoix).
- Saute until the onions become translucent.
- Add garlic and saute for one minute.
- Add chicken base, water, salt, pepper, and thyme.
- Bring to a boil.
- Add shredded or cubed chicken.
- Add spinach and milk.
- Gently add in the gnocchi and boil for 3-4 minutes.
- Add additional salt and pepper to suit your tastes.
