Lemon Pound Cake

A lemony, buttery cake with a sweet sugary crust.

Ingredients

  • 3 cups Flour - all-purpose flour works great
  • 1 tbsp Baking Soda
  • 1 tsp Salt
  • 3 cups Sugar
  • 1 cup Salted Butter - room temperature
  • 1/2 cup Butter Flavored Shortening - room temperature
  • 5 each Egg - large, room temperature, beaten
  • 1 cup Milk
  • 2 Lemon - zest and juice
  • Cooking Spray
  • 1/4 cup sugar

Instructions

  • Heat oven to 400°
  • Combine sugar, shortening, eggs, milk, lemon zest, and lemon juice in the mixing bowl. Mix until blended.
  • Sift flour, baking soda, and salt together.
  • Add the dry ingredient mixture slowly to the wet ingredients. Blend until all the ingredients are combined.
  • Coat the bundt pan evenly with cooking spray, careful not to overspray.
  • Add the 1/4 cup of sugar to the bundt pan, shaking the sugar around the pan to coat the sprayed area with sugar. Discard the extra sugar once the pan is coated.
  • Bake for 55-60 Minutes depending on your oven. Check the bundt with a toothpick to see if it comes out clean. If it does, your bundt is done.
  • Let the bundt cool for 1/2 hr or until the sides begin to pull away from the pan. Place a wire rack on the top of the pan and flip the pan over to remove the bundt.

Notes

Culinarian tips, tricks and suggestions:  When coating the pan with the cooking spray and sugar, we perform this process over the sink or trash can, eliminating the mess from the overspray and allowing the sugar to coat the entire wall surface of the pan.
Depending on the size of your lemons, you may need to add another lemon if your lemons are small or eliminate a lemon if your lemons are large.
This lovely bundt can also be served with our Strawberry Margarita Syrup.
