Chicken Bacon Ranch Casserole
A savory, rich chicken casserole that will please the entire family!

Ingredients
- 2 lbs Chicken - breast or thighs - cubed
- 2 cups Broccoli - cut into small pieces
- 1 lb Bacon
- 2 tbsp Ranch Dressing
- 2 tbsp Canola Oil
- 2 cups Sharp Cheddar Cheese - shredded
- Salt and Pepper - to taste
Instructions
- Preheat oven to 375℉
- Rinse the chicken and cut it into bite-size pieces.
- Place the chicken in a mixing bowl and add oil.
- Then toss in oil - Tossing your chicken in oil instead of putting oil in the pan makes for even coverage, which means no sticking and no excess fat used.
- Seasoning the chicken is one of the most critical steps. you can use whichever seasonings you like. The minimum is salt and pepper.
- Here's the other "secret" when cooking chicken. We use an electric skillet. There is no stress about hot spots, concerns about a big enough pan, or splatters all over the place.
- Boil your broccoli and strain. The time it takes to cook depends on if you are using fresh or frozen broccoli. You are looking for a bright green color and semi-hard texture. Typically 3-5 minutes.
- After you strain, run cold water over the broccoli to stop the cooking process.
- Cut the broccoli into small pieces and remove the stems.
- Cut the bacon into small pieces.
- Cook the bacon.
- Mix the chicken, broccoli, bacon, cheese, and ranch dressing. Be sure to save about ⅓ of the cheese for the top of the casserole.
- Place in a 9x13 baking pan and top with the remaining cheese.
- At this point, you can put it in the refrigerator for later or put it into the oven right away.
- Bake for approximately 15 minutes, until the cheese is melted. You want it nice and bubbly.
- The internal temperature should be 165℉.

Culinarian Tips, Tricks, and Suggestions: You have many options when cooking bacon. You can cut the bacon into pieces with scissors before you cook it. You can oven-bake or air-fry the bacon or crisp it in a skillet. The key is to achieve a crispy, crunchy texture. We have found that twisting the bacon length-wise and air-frying it gives outstanding results with little to no mess. We then dice the bacon with a knife once cooled.
