Kickin' Coleslaw
A quick and easy creamy coleslaw with a pleasant kick to finish.

Ingredients
- 3 cups Cabbage - fresh and shredded
- 1 whole Carrot - grated or shredded
- 1 tbsp Sugar
- 1 tbsp Apple Cider Vinegar
- 1 tsp Dry Mustard
- ½ cup Mayonnaise
- ⅛ tsp Cayenne Pepper
- Salt and Pepper - to taste
- Chives
Instructions
- Using a food processor or hand grater, shred the cabbage and carrot.
- In a mixing bowl, combine the sugar and apple cider vinegar.
- Stir the mixture until the sugar is dissolved.
- Add the remaining dry ingredients and stir it until combined.
- Mix the mayonnaise into the vinegar mixture.
- Add the shredded cabbage and carrot. Mix until everything is thoroughly coated in the wet mixture.
- Place the salad into a large serving dish and garnish with fresh chives.

We like to make the coleslaw the day before serving. It allows the ingredients to marry for a tangier flavored slaw. Fresh cabbage and carrots have a high water content, so if you let them sit too long in the fridge, your coleslaw will be runny. We have found that making the wet ingredient mixture the day before and keeping it separate from the cabbage and carrot also works. Then, shred your cabbage and carrot and combine to serve.
